Carcasse is a well-known restaurant in Knokke, and under Chef Timon Michiels it earned a Michelin star. Worth the trip to the sea!
The concept is kop tot staart, every part of the animal is used, and the interior feels like a beautifully curated butcher's shop, with steak knives built right into the table. We went for the Chef's Choice menu at €139 and I'd do it again without hesitation. The côte à l'os with 5 sides was incredibly tender, but the mousseline purée stole the show.
