Would you try raw chicken in Japan? I was sceptical, but at Yakitori Shinohara in Tokyo it ended up being one of the most memorable meals of our trip.
A tiny, intimate spot specialising in Kobe Takasaka chicken, where every course explores a different part of the bird, grilled, raw and everything in between. The wildest dish was chicken tartare in nori with a soy-cured egg yolk. A real mental hurdle, but so good.
